A true carbon footprint surely embraces all activities from

raw material production and transportation through to distri-

bution and even consumer practices.

Several studies have been undertaken on the carbon foot-

print of brewing. The New Belgium Brewing Company

declared what the footprint is for a six pack of Fat Tire Ale. 3

Other studies have delved even deeper, factoring in for instance the contribution made by employees traveling to work.

Naturally, there is a strong correlation between energy

consumption and carbon footprint, carbon dioxide being gen-

erated when fuel is burned. So any measures to conserve energy will have a direct impact on the carbon footprint bottom line: turning off lights; energy conservation protocols in

all operations; not forgetting to get employees to think about

the most efficient way they can get to work.4

And then there is waste. Most brewers divert their spent

grains to cattle feed--quickly, otherwise they sour, much to the distaste of the cows. Surplus yeast can be used to feed pigs--the porkers being especially delighted as there is usually plenty of alcohol still bathing the cells. Spent water is increasingly diverted by brewers to anaerobic digesters,

where bacteria convert the molecules in the water to

methane, which can be burned with the release of utilizable

energy. Some brewers put waste water onto fields, to grow crops such as canola that can be converted into biodiesel to fuel trucks. Some are debating channeling gases from landfill

to burners. More than one has installed vast solar panel arrays; one I know is aiming to erect a wind turbine.
